Craftsmanship
Picking
Wuyi rock tea is picked at the open-face stage. Leaves must be free of surface water, undamaged, fresh and uniform, and sent to the processing facility within one hour.
Withering
Withering softens the leaves by removing moisture. It is the foundation of rock tea's aroma and taste, promoting internal biochemical changes.
Shaking
Shaking is a crucial step in Wuyi rock tea production, creating the tea's color, aroma, and the signature green-leaf-red-edge appearance through alternating shaking and resting.
Pan-Firing
High heat deactivates enzymes in the leaves, halting oxidation and fermentation, enhancing aroma, and softening the leaves for the next step.
Rolling
Rolling shapes the tea into its distinctive twisted form while the leaves are still warm and soft, until the juices emerge and the leaves curl into strips.
Baking
Also known as water-removal baking, this step rapidly dehydrates the leaves, inhibits enzymes, fixes quality, and prepares the tea for long-term storage.
Sorting
Skilled workers manually remove stems and defective leaves in two stages: first removing stems, then screening out yellowed or discolored leaves.
Final Firing
The final roasting brings the tea to its desired level, preventing mold, reducing bitterness, enhancing flavor, and enriching body — the step that gives rock tea its soul.
